The Ritz London: The Cookbook is the hotel’s first cookbook to celebrate the cuisine served at the famous Palm Court, the famous Rivoli Bar and the Michelin-starred Ritz Restaurant, all within Piccadilly location of the hotel.

The recipes in John’s book are arranged according to the four seasons of spring, summer, autumn, and winter. Each season begins with a special cocktail and canapé combination featuring appetizers, entrees, and desserts.

Unique sections on topics ranging from tea to truffles are interspersed. There are simple recipes (like the famous Cinnamon Sandwich and the beloved Champagne Cocktail), seasonal recipes (like the Wild Bean & Garlic Soup and Salted Grilled Celeriac), signature dishes (like The Ritz Venison Wellington and Crêpes Suzette), and fine dining (like Canard à la Presse and Cambridge Truffled Ice Cream).

John Williams MBE has been in charge of the Ritz Restaurant as the hotel’s Executive Chef since 2004. The son of a Tyneside fisherman is now one of the UK’s most celebrated chefs, his dishes are recognized favorite kings, presidents and other dignitaries.

His most recent honors include a “Special Award” at the 2017 Annual Catey Awards, in recognition of his contributions to the industry, and he was named AA Chef of the Year. 2017–2018. He is also Executive Chairman of the Royal Academy of Culinary Arts and a member of Le Conseil Magistral de Disciples of Auguste Escoffier.

John Williams was the first British chef to receive a Chevalier de l’Ordre du Merite Agricole (CMA) from the French government in 2005. In 2008, Queen Elizabeth II honored him with an MBE for his contributions to the hotel industry.

For the first time in the hotel’s history, the Ritz Restaurant achieved a Michelin star under his direction in the UK and Ireland Michelin Guide 2017.
