Restaurant co-owners Pam Brunton and Rob Latimer, sit in their home kitchen, surrounded by floor-to-ceiling windows that create views of land, lake and hills. Pam began describing their joint mission to open their restaurant on Loch Fyne on Scotland’s west coast while holding coffee mugs in both hands. Rob oversees the restaurant while Pam cooks while she’s at work, and Inver is just minutes away.
In London, two Scots met. Rob, an animator, and Pam, a chef, have a passion for consuming both. As their careers developed, Pam began to travel and spent a year working in an old walnut processing factory in Southwestern France. This experience shaped her and Rob’s idea of a future restaurant. Locals, she recalls, would deliver baskets of mushrooms and raspberries that were still warm in the sun to the back door. “This is what I want if I am going to open my own restaurant. Not simply products, but interpersonal relationships.
The couple’s desire for education and experience led them to take the stage first at Noma in Copenhagen and then at Magnus Nilsson’s Faviken restaurant in Sweden. They were attracted by the similarities between the geographical and cultural climates of Scandinavia and Scotland. Both establishments were at the heart of the “new Nordic food movement” and it was here that Rob developed significant expertise in high-end modern restaurants.
Pam took a break from cooking after nearly ten years working in restaurant kitchens to earn a master’s degree in sustainable food systems. She says it has helped her better grasp how to act and make her own decisions that fit her ideas. It gave her a way to express the ideas and ideals she possessed, she added. She made a movement towards the window. “In my opinion, an ecosystem includes both natural environment and human ecology. I believe you can immediately see the consequences of what you’re doing when you’re close to the water, the slope, and the surroundings.
