You probably picture a lot of meat when you think of Cypriot Greek and Greek cuisine. Georgina Hayden admits: “There is a lot of barbecue and we love grilling. “That’s probably a reasonable prejudice.”
She is particularly interested in learning more about plant-based foods consumed during fasting seasons such as Lent. And fasting is practiced for up to 200 days annually, including the 50 days before Christmas and Easter, as well as every Wednesday and Friday.

Hayden, who spent 12 years working with Jamie Oliver, dedicated his most recent cookbook to nistisima, which is “a Greek word for Lent food,” according to Hayden. “It is the food we consume before any important religious occasion.
That’s the overall definition, but if you’re given anything as “nistisimo” or a food as “nistisima,” that basically just implies that it’s plant-based. Despite the fact that it contains shellfish, Hayden’s book is completely vegan “for the sake of ease”.
The religious allusions and the vegan diet might make it seem intimidating, but that wasn’t entirely Hayden’s intention. Her goal is to “empower people with countless recipes that introduce more lentils and vegetables into their lives” rather than “telling people what to do”. She’s not vegan herself and wouldn’t urge anyone to adopt a completely plant-based diet if they didn’t want to.
Furthermore, neither vegan cheeses nor meat substitutes are sadly mentioned in the book. Hayden even admitted that vegan feta was “really the most disgusting thing I’ve ever eaten” after trying it once (“I’m curious!”). Instead, she discovered that many local foods from Cyprus and neighboring countries were inadvertently vegan and utterly delectable.
